- 3 eggs
- 1/2 onion, finely chopped
- 1 tomato, chopped
- 1 green chilli, optional
- 1/4 tsp turmeric
- 1 tsp oil
- Salt and coriander
Preparation
- 01.
Soften onion and chilli in oil over medium heat.
- 02.
Add tomato and turmeric; cook until jammy.
- 03.
Pour in whisked eggs and stir gently to a soft scramble.
- 04.
Season, finish with coriander and serve with toast or roti.
